Ingredients:
2 ripe bananas
3 eggs
2 cups oatmeal
1 tsp cardamom
1 tsp vanilla powder
1 pinch of salt
1 cup oat milk or plain milk
1 tsp baking soda
whole roasted coconut flakes
coconut oil for frying
Garnish
Blueberries and blackberries
Cream of Greek yoghurt stirred with a little vanilla powder, strawberry flowers or another edible flower
Here's how you do it:
Blend all ingredients except the coconut flakes to an even mass. Let the dough soak for 10 minutes.
Heat a good teaspoon of coconut oil on the pan and pour the dough into a size you like. They should remind you of small thick American pancakes. The consistency of the dough should be thick, if it has become too thick or thin, adjust with more milk or oatmeal and blend.
Fry the banana pancakes at medium heat and add more oil if they are stuck. Before turning the pancake, and while the dough is still wet, sprinkle on a small handful of coconut flakes. Gently turn with a palette, they need a little help and maybe a little rustic.
